Nanbu Ironware, a Useful Cast-iron Pan that Makes Food Delicious

Rikucho Ogasawara, is a well-known designer of Nanbu Ironware.

He was also a manufacturer of the ironware and taught many artisans.  Rikucho made a great contribution to the cast iron industry in Mizusawa city (currently Okusawa city), Iwate Prefecture. Over 60 years, Rikucho has made various kinds of daily Nanbu Ironware based on a traditional technique of production. The simple and modern design of his products has been highly evaluated.

Minipan is a small cast-iron pan designed by Rikucho Ogasawara. It is a surprisingly small size and is perfect for frying and baking. 

Minipan is able to be placed in an oven directly and can be cooked on direct flame or on an induction cooker. Also, here are more good things about the pan.

 

 

High heat retention

 

The best thing about Nanbu Ironware is that it retains heat for a long time. Even if you leave the pan with some food after cooking, you can still feel the warmth. How to use and care Minipan, the cast-iron pan

 

 

Start from seasoning

 

 

Wash the pan first with a soft sponge and dish soap. Dry promptly and thoroughly, then place on a flame. When you feel the heat on the surface, put a cup of oil inside, then wait for a few minutes. 

Remove oil from the pan, then fry some vegetables. This process removes the smell of the pan, makes the pan easy to cook and prevents the pan from rusting. 

 

 

What you need to know

 

 

 

Do not touch the pan when it is heated. The pan, including the handle, becomes extremely hot, especially when it is on a flame. Use oven mitts and pot mats. Place extra oil when the pan is on a flame, and make sure to use low heat. This process prevents the pan from burning. 

 

 

Care the pan after every use

 

After every use, wash the pan by hand. Use warm water and rub the surface with a sponge or dish brush. You do not need to use dish soap. Use cleanser when you find rusting.After washing, dry promptly and thoroughly with a soft cloth. Then place the pan on a flame to dry completely.
