A tool for spending beautiful days

A kitchen knife kasane made by a long-established store with a history of over 100 years in Seki, Gifu prefecture. I'm longing for a full-fledged steel knife, but it's also difficult to maintain during busy days. I want a kitchen knife that is easy to care for and fits comfortably in the small hands of women. I shaped such an ideal.

A blade is the life of a knife. The kasane blade uses a thin blade of gold-steel high carbon stainless steel that combines the excellent sharpness of a high hardness material with rust resistance. It was ground to a thickness of 0.15 mm to 0.2 mm, which is about half the thickness of a normal kitchen knife, using the newly developed "ZERO EDGE" sharpening method of sumikama. While a normal kitchen knife will lose its sharpness due to wear, kasane will last longer due to its thin blade and low friction resistance.

There is a bulge in the middle part, and the handle that fits comfortably in your hand is made from Gifu Prefecture's beautiful natural wood “Yamazakura”. Yamazakura is a material that is suitable for kitchen knives because it is tenacious and strong, and it has high water resistance and excellent storage stability, but it is difficult to stably supply it because it is a natural tree, so it is actually used for kitchen knives. Is a rare piece of wood. It is a popular material for furniture because it has a glossy luster when polished and the cherry blossom color is beautiful, so it is difficult to obtain good materials in the market, but it is a forestry company in Gifu prefecture. The kasane culture knife has a blade spanning of 16.5 cm, which is easy to handle even for women's small hands and easy to use for small cutting boards and cutting boards. Sumikama, a knife maker founded in Seki City, Gifu Prefecture, was founded in 1916 (5th year of Taisho). Seki City, Gifu Prefecture is located in the central and southern part of the Nagara River known for cormorant fishing in the central and southern part of Gifu Prefecture, and is known as Japan's leading knife-making city. The history of the knife industry in Seki City is as old as 780 years ago, with high quality burned clay, pine charcoal used for furnaces, high quality water, and water transport on the Nagara and Tsubo rivers. Since it had the ideal climate conditions for swordsmithing, many swordsmiths gathered all at once, and Seki's sword that "it does not bend and bends well" spread its name all over the country.

Care

  • ◇ Immediately after use, wash with a dish soap and a soft sponge, wipe off water sufficiently, and store in a well-ventilated and safe place.
    ◇ If you grind with a whetstone about once a week, the sharpness will last. (We also support re-sharpening by the manufacturer, if you wish, please contact customer support.)
    ◇ The handle is coated with urethane for tableware. It may change over time due to use, but please understand the characteristics and texture of natural wood.
    ◇ If you are worried about dryness or color change on the handle surface, add a vegetable oil such as walnut oil or grape seed oil to the cloth and blow it on to give a natural luster.
